Irish Soda Bread


I don’t know that I have ever made Irish Soda Bread although I have eaten it many times. What a pleasure and a cinch this was to whip up!!  And it was delightful to eat.


I found it stayed pretty soft while wrapped in a towel and then in a plastic ziplock – at least for a couple days — not that it should have lasted that long — except that we are a bunch low-carbers here!
